Au Bon Clocher - Canary Restaurant
Home-style cooking between land and sea
Chef Ange's traditional Corsican cuisine is generous and authentic. Every dish is homemade, with particular attention paid to the quality of the produce. The menu features seafood and shellfish from the restaurant's own fish tank, as well as grilled meats, pasta and island specialties.
Corsican pork charcuterie Nustrale
The Corsican charcuterie served at Le Bon Clocher is made from free-range Nustrale pigs fed on acorns and chestnuts. It comes in particular from the Bazziconi house in Rapale, and offers an assortment of coppa, lonzu, sausage, figatellu, prisuttu, as well as artisanal terrines and pâtés.
Goat's and sheep's cheeses from Canari and elsewhere
Among the star starters, cheese fritters and brocciu pasta are made with goat's milk from Patrick Gassmann in Canari or ewe's milk from Lorenzi Sabrina, an award-winning breeder in Paris. Depending on what's available, a selection of Corsican cheeses can be served with dishes or as part of plates to share: brocciu AOP, niolu, bastelicaccia, sartenais or venacais, to name but a few.
Cap Corse spiny lobster, products from the fishpond
The restaurant offers seafood-flavored dishes such as seafood tagliatelle, grilled fish from the catch of the day (sea bream, sea bass, St. Pierre), prawns and, of course, lobster from Cap Corse, prepared chef-style. These products are showcased in a simple, seasonal and tasty cuisine.
Corsican desserts and house specialties
To end on a sweet note, the dessert menu includes several Corsican pastry classics such as fiadone, pastizzu and chestnut crème brûlée. Other sweet treats round off this gourmet farandole: lemon mousse with canistrelli, iced nougat, tiramisu, panna cotta... all homemade.
