It comes primarily from the Bazziconi family in Rapale and offers an assortment of coppa, lonzu, sausage, figatellu, and prisuttu, as well as artisanal terrines and pâtés.

Goat and sheep cheeses from Canari and elsewhere

Among the signature appetizers, the cheese fritters and pasta with brocciu are made using goat's milk from Patrick Gassmann in Canari or sheep's milk from Sabrina Lorenzi, an award-winning dairy farmer in Paris. Depending on availability, a selection of Corsican cheeses can accompany the dishes or be served as platters to share: AOP brocciu, niolu, bastelicaccia, sartenais, or venacais, to name just a few.
