L'Ortu di San Ghjuvà in Cauro - Market gardening & Corsican organic baskets - Nursery
Organic grocery & greengrocer (Ajaccio - Cauro) since 1985
L'Ortu di San Ghjuvà - the garden of Saint Jean - located on the eponymous plain between the villages of Cauro and Eccica Suarella near Ajaccio, is a family-run production combining the know-how of three sisters, Saveria, Serena and Sabella Fortuné.
Starting from nothing, their parents began by selling flowers on the roadside in the 80s, before forming a cooperative (Corsica Fiori) with other farmers after realizing that most flowers in Corsica were imported from Holland and the continent.
Over the years, the Fortuné family has developed this garden into a veritable local ecosystem, combining organic market gardening, grocery shopping and nursery gardening. Respect for the land, seasonality and the transmission of know-how are the cornerstones of this approach. Today, L'Ortu di San Ghjuvà has become a benchmark in the Ajaccio region for those seeking authentic produce grown with passion and freshness.
Corsican organic fruit and vegetables of the day

In 2016, the l'Ortu di San Ghjuvà boutique was born, featuring organic fruit and vegetables from the farm, organic preparations from the production and a grocery store of Corsican products.
At the age of 29, Saveria manages every detail of organic market gardening, with a commitment from the ground up. The island's climate allows for a wide variety of crops, so you'll find seasonal fruit and vegetables all year round, with many varieties, up to 40 varieties of tomato, grown in 3 hectares of gardens in open fields and greenhouses.
Pick-up at 6 a.m., on the stalls by 9 a.m.
During the season, fruit and vegetable picking starts at 6 a.m. and ends at 9 a.m. in the store.
The freshness of our produce is preserved by a short supply chain, which is essential for preserving the quality and nutritional value of our products. The grocery store also has a cold room for the most fragile products.
Fruits & vegetables - March to May-June
Spring ushers in the season of tender greens and the first sweets. Artichokes and peas arrive with the salads, while strawberries appear for the first homemade pies.
Minute ideas: chard bastelle, baby spinach pan-fried with garlic, radish/salt/olive oil. Red berries are also used in Babbò jams.
Fresh tip: keep artichokes cool in a micro-perforated bag. Herbs (parsley, basil later) can be stored upright in a glass of water.
Fruits & vegetables - June to September
Summer is the realm of tomatoes (up to 40 varieties) , zucchinis and eggplants. It's also the peak season for melons, watermelons and figs for ultra-fresh desserts.
Try our homemade garden pizzas, tomato-basil caprese, Babbò zucchini velouté and grilled vegetables in homemade lard.
Tomato preservation: never refrigerate to preserve aromas. Basil as a bouquet, stems in water.
Fruits & vegetables - Autumn / Winter
Make way for squash, cabbage and leeks for comforting soups. Corsican oranges benefit from optimal sunshine to fill up on vitamin C, and make up winter desserts and jams.
At the table: velouté de courge, poêlée de brocolis, potée de saison; organic bread from Galléani to accompany, and roast free-range chicken (Friday & Saturday) for weekends.
Anti-waste tip: cook the squash, roast the seeds and store some of the purée in the freezer.
Peaches, Nectarines, Corsican Apricots
For fruit that L'Ortu di San Ghjuvà does not produce, the market gardeners buy locally from Corsican growers, both conventional and organic. This is particularly the case for plums, mirabelles, peaches, nectarines and apricots. But also for dried fruits such as walnuts and hazelnuts from Cervione.
In the region's restaurants
L'Ortu di San Ghjuvà's organic produce can also be found on the plates of the region's restaurants and hotels, including : L'Altru Versu, le Bistrotellu, Hôtel les Mouettes, Pastificio e risotteria, Brasserie l'Instant, La Brasserie du Diamant, A Trattoria, Hôtel Palm Beach, Auberge du Prunelli, Auberge Napoléon, Auberge Ajaccienne, and Le Maquis.
Organic baskets - Corsican fruit and vegetables delivered or to collect

L'Ortu di San Ghjuvà also delivers baskets of organic fruit and vegetables from the farm. Deliveries run from Monday to Friday in season, and are reduced in winter depending on available production, with a low point in January-February.
Deliveries are made to Ajaccio and the surrounding area, the city center and restaurants. Click and collect is preferred for neighboring villages, Cauro Eccica Suarella, Grosseto Prugna, as the store is located on the main road. For all other requests, please do not hesitate to contact Saveria directly.
Tomato sauce, zucchini velouté, Bio di Babbò preparations
L'Ortu di San Ghjuvà aims to create a virtuous circle based on ecology and the environment, where nothing is thrown away. For example, tomatoes that are too ripe to be sold are used to make plain or flavored tomato sauce, zucchini to make tasty zucchini veloutés, and jams (strawberry, fig, plum, apricot, raspberry), with a special mention for fig jam with walnuts.
All these preparations are simmered and cooked by Jean-Michel Fortuné, and are much appreciated by our customers. You'll especially appreciate our ready-to-use tomato sauce, made with tomatoes, onions, garlic, oregano, basil, thyme, sweet bay leaves, salt and pepper.
You'll also find jars containing ready-to-eat oil preparations: eggplants, peppers, zucchinis.
