Menu of Restaurant I Fuletti 2024
Alessandro works with a chalkboard menu, changing the restaurant's offerings daily based on deliveries and local market produce. The displayed menu consists of appetizers, main courses, hamburgers, a selection of freshly made pastas prepared daily in the restaurant, traditionally ground on a stone mill by i Mulinaghji Corsi, homemade desserts made daily, and in-house produced ice creams. The ice creams are made from fresh, raw milk from cows raised in Talasani, and the sorbets from Corsican fruits. See particularly the article from Corse Matin about I Fuletti.

Homemade and Innovation
I Fuletti showcases Italian cuisine by making its own fresh pasta, as seen in videos like the preparation of gnocchi, and also its mozzarella. The fries are homemade as well, and the bread is sourced from the bakery.
It is through this work philosophy that Alessandro continuously seeks local products, fruits, vegetables, Corsican meat, and fish based on availability. He works exclusively with fresh products and also offers artisanal ice creams.
Cuisine with Corsican and Italian Influences
The cuisine served at the I Fuletti restaurant will delight the palate of gourmets with its Mediterranean flavors and quality products.
Blue Crab Cuisine, an Invasive Species
Making headlines in recent years, the blue crab is a species that invades the island's ponds, devouring everything in its path, including fish, oysters, and mussels.
This calamity for fishermen is addressed by Alessandro by featuring the crustacean on the menu, which additionally boasts delicate and flavorful meat.

History of the Place
The name 'I Fuletti' refers to the origins of the place. This story is inscribed on a slate inside the restaurant and on the first page of the menu :
Originally, this place was brackish water, from which sprang strange lights that the inhabitants of the village of Casinca, in the heights, took for "Fuletti". Thus was born Folelli, the village of will-o'-the-wisps. For our part, we have kept the original name, out of love for our roots and traditions, essential to building the future.
