The Casa Serena farm offers traditional farmhouse charcuterie near Cauro in southern Corsica, 15 minutes from Ajaccio and 5 minutes from Porticcio.

Founded 12 years ago, the Casa Serena charcuterie carries on a tradition of traditional craftsmanship whose authenticity evokes the flavours of yesteryear. This quest for quality begins at the farm, with meticulous care lavished on the animals and their environment, from birth to slaughter.

Serena, who started her farm at just 23 years of age, sells her cured meats in the family-run organic grocery shop l'Ortu di San Ghjuvà in Cauro, located on the road to Bonifacio.

You’ll find traditional cured meats such as sausage, coppa, lonzu, prisuttu, panzetta, vuletta, as well as figatellu, sausages, and head cheese.

Porcu Nustrale pig farm

The pig farm consists of 150 pigs, mainly of the Porcu Nustrale breed, but also a few Duroc pigs.

Serena preserves the lineage of each birth, respecting the animal by fattening it for a minimum of 14 months, compared with 6 months for industrial farms. This represents a higher cost, but guarantees both the well-being of the animals, which live in a natural environment of 30 hectares of oak and scrubland, and the quality of the meat, which is all the more highly valued.

Processing remains the essential phase, with Serena carrying out each stage by hand in a fully equipped laboratory where the meat is worked on piece by piece. She uses traditional processes to produce this exceptional charcuterie.

All the charcuteries available at L'Ortu di San Ghjuvà

This is a farmhouse charcuterie which is not PDO because the farm is located at an altitude of 80 metres, but which retains all the aspects of tradition and authenticity.

You’ll find Serena’s charcuterie in the organic grocery shop l'Ortu di San Ghjuvà with:

  • Corsican sausage: 100% lean and fat pork nustrale, pepper, natural casings
  • Coppa: Nustrale pork loin, salt, pepper, herbs, matured for 3 months
  • Lonzu: Pork tenderloin from Southern Corsica, salt, pepper, herbs, matured for 2 months
  • Prisuttu (Corsican ham): Pork leg from Southern Corsica, salted and trimmed, matured for 18 months
  • Figatellu (winter): Nustrale pork lean and liver, pepper and garlic, natural casings
  • Head cheese: Nustrale pork head and shank, cooked to taste, boned and seasoned
  • Panzetta: Pork belly, salt, pepper and herbs
  • Vuletta (pork cheek): Southern pork cheek, salt, pepper, herbs. Dried and matured

Located on the Cauro road alongside the RT40, this organic grocery shop is run by Serena’s sister Saveria. The nursery is adjacent to the organic grocery shop, which sells the vegetables and fruit produced by the organic market garden.

The work of the land through flower-growing, market gardening and orchards dates back to the parents of Saveria, Serena and Sabella, three sisters with different but overlapping backgrounds. Sabella, for her part, runs a luxury rental business, also in the commune of Cauro.
