Jean-Luc Battesti is a breeder and producer of Corsican farmhouse charcuterie in the Cruzini region of Azzana. Charcuterie AOP, honey and jams made by his wife Isabelle, are available for direct sale or online.
PDO Corsican charcuterie in Azzana
Jean-Luc Battesti and his wife Isabelle produce AOC Corsican charcuterie in the Cruzini valley on the outskirts of Azzana (towards the Tartavello pass), and also run a market garden. Throughout the year, Isabelle Battesti makes artisanal seasonal jams.
Farmhouse corsican charcuterie
A member of the porcu nustrale association, Jean-Luc Battesti and his wife Isabelle own some 150 porcu nustrale black pigs, which are kept in the open on several hectares of forest. The pigs feed on acorns and chestnuts in autumn, especially before slaughter, to give their charcuterie its distinctive character.
During their growth, the pigs' feed is supplemented with barley, corn and wheat of 100% vegetable origin, as required by the AOC specifications.
Traditional charcuterie includes sausage, coppa, lonzu and figatellu in winter, dried over a wood fire, as well as headcheese, boudin, terrines and pork lard, which is very useful as a fat substitute for margarine, butter or oil.

From April 1 to the end of September, the Umbriccia production is available for sale at the paillote at the address at the bottom of the page, with 100% farm-produced meals: charcuterie, cheese from the producer and fruit and vegetables for just €25 per person.
Open from June for lunch and dinner until 10:30 p.m. (and later for theme evenings), this year's paillotte will offer 30 covers with chairs and tables, or the possibility of standing meals with a high table. Reservations are not required, but are recommended.
How to get there?
From Cargèse, take Casaglione, Arro, Ambiegna, Lopigna, then after 9km turn right towards Col de Tartavello in Vero for 1km. Coming from Ajaccio, follow signs for Bastia, then for the Vero adventure trail, then down the Col de Tartavello for 9km.
During the season, lunch and dinner menus feature products from the Umbriccia farm (call ahead).
Free guided tour of the farm
As part of their commitment to quality agriculture, Jean-Luc and Isabelle invite you to discover their pig and goat farm.
This guided tour is open to all, families and groups alike, with no age limit as everything is fenced in.

Depending on Jean-Luc's audience, the tour can be conducted in French, English or Corsican for Corsican speakers.
Walking shoes are recommended for the visit to the farm.

Prices for charcuterie and jam are given in the table opposite. As the family business is a small one, the various cured meats are not available all year round. This year, lonzu and sausage will be available from March onwards, while Coppa will be available from April-May. Figatellu and sausages are available all winter long.
Rosette is also available from August. Until 2024, Jean-Luc and his wife owned a few goats and beehives, and also produced cheese and honey.
Mail-order sales
Orders can be placed directly by e-mail or telephone by contacting Jean-Luc and Isabelle. The jam and charcuterie are vacuum-packed; only the boudin and fromage de tête, which are fresh products, are sold direct, as they cannot be transported.
Christmas baskets
For the festive season, the farm offers a selection of its products (terrines, vacuum-packed charcuterie, figatellu, prisuttu) available by mail order or online, subject to availability.
Participative Corsican market gardening
In spring 2019, the project for conventional and traditional market gardening without chemical treatments was born. Jean-Luc Battesti shares photos of his various harvests (potatoes, tomatoes of various varieties, Corsican kidney beans, carrots, strawberries, blueberries, blackcurrants, melons, watermelons, figs).
Crates of freshly-picked seasonal fruit and vegetables are available to take away throughout the harvest. Some of these are transformed into jam, strawberry jelly or tomato sauce.
Jean-Luc also grows corn and Corsican wheat, which he uses to make wheat and corn flour, and will soon be making his own bread.
Since 2020, Jean-Luc Battesti has been offering participatory market gardening, where customers are invited to harvest fruit and vegetables on the spot in complete transparency.
