A member of the consortium of Corsican cured meats producers, Charcuterie Passoni is a family business that has been passed down through 4 generations. Founded in 1972 by Anne Passoni's father-in-law, she is helped by her daughter and two nephews, the eldest of whom is a charcutier by training, and who are keen to perpetuate their uncles' know-how.

Address and opening hours

Located in Venzolasca en Casinca, you'll find her in the Arena Suprana district, at a place called Mandriaccio, by taking the road parallel to the T10 behind the land beehive. Signs will guide you up to a property with a white balustrade. To make sure you don't get lost, you can also follow the route planner at the bottom of the page. This is where the charcuterie is processed, dried and matured. The store will be on your left as you enter the property.

The Passoni charcuterie is open Monday to Friday from 8am to 6pm, and Saturday from 8am to 12pm.

An artisanal charcuterie that has modernized while remaining faithful to its ancestral know-how, Passoni charcuterie has a character that is well representative of traditional Corsican charcuterie, appealing to all, both fine and spicy, with a good balance between spices, salt and pepper.

Corsican cured meats available

You'll find all the traditional cured meats, smoked over chestnut wood in our drying sheds:

  • Pork or wild boar salami
  • Coppa
  • Lonzu
  • Prisuttu (Corsican ham)
  • Panzetta
  • Bulagna

After 9 months' maturing, prisuttu is sold whole or in vacuum-packed pieces. The same goes for panzetta and bulagna.

You'll also find wild boar sausage, made from a mixture of pork and wild boar, with a slightly stronger taste than traditional pork-only salsiccia.

Figatellu in winter

In November, you'll find the first figatellis, which can be cooked over a wood fire or in a frying pan, and are the perfect accompaniment to winter meals.

The store is open all year round from Monday to Saturday lunchtime, for direct sales with the option of paying by credit card. It's also here that we prepare packages ready for dispatch for mail-order orders. Please do not hesitate to contact Mme Passoni directly.
