The Torre charcuterie has its own pig farm in Cuttoli Corticchiato near Ajaccio, and sells its charcuterie directly from the A Casetta farm on the Cuttoli plain and online.

Jules-Antoine Torre - Toto - has been producing Corsican charcuterie on the Cuttoli-Corticchiato plain since 1977. The laboratory of the Torre family charcuterie is located at the A Casetta farm, which is also a caterer and wedding planner.

Direct sales by appointment

To ensure staff availability, it's best to make an appointment for tasting and purchasing charcuterie direct.

Online sales - Shipment every 15 days

Torre charcuterie is also available online via the Brin de Corse boutique: depending on stocks, you can order sausages, lonzu, coppa, prisuttu or figatellu and have them delivered to your door. Shipments are grouped together every 15 days or so, to guarantee smooth logistics for the dispatch of this artisanal Corsican charcuterie.

Preserving charcuterie the old-fashioned way

Perpetuating traditional know-how, Jules-Antoine retains old-fashioned manufacturing methods such as using bread paper instead of casings to wrap charcuterie.

In this way, the cured meats keep longer, with a longer best-before date. Lonzu can be kept for up to a year, and coppa for up to 15 months.

Please note that boudin, fromage de tête, saucissette and figatellu are only available from early November to late March.

Porcu Nustrale and Duroc pigs

Spread over 10 hectares, the Torre family's farm has 250 pigs, of which around a hundred a year are used for charcuterie. The pigs used for charcuterie are of the Corsican porcu nustrale breed, while the other half are of the Duroc breed. The latter, which are fatter, are used exclusively in the A Casetta catering kitchen, for grilled meats or dishes in sauce.

The pigs are raised on a natural diet of acorns and chestnuts, supplemented with barley flour.

Everything starts up again in November, then, depending on the season, some charcuterie products (saucissette, figatellu) are seasonal (produced in winter), while others need maturing and are sold from winter through to summer.
