Farmhouse Charcuterie - Direct Sales by Appointment
Jules-Antoine Torre - Toto - has been a producer of Corsican charcuterie since 1977 in the plains of Cuttoli-Corticchiato. It is at the A Casetta Farm, a caterer and wedding and event organizer, where the Torre family charcuterie laboratory is located.

Since November 2020, an online store has been available on Brin de Corse, subject to availability. Please note that for logistical reasons, delivery times can take up to 15 days or more, especially during peak periods, notably in the summer.

Traditional Charcuterie Preservation
Perpetuating traditional know-how, Jules-Antoine maintains ancient manufacturing methods such as using bread paper instead of casings to wrap the charcuterie.
In this way, the charcuterie keeps longer with an extended Use-By Date (UBD). Lonzu can be preserved for up to a year, and coppa up to 15 months.

Porcu Nustrale Breed Pigs
Spanning 10 hectares, the Torre Family's farm consists of 250 pigs, of which about a hundred per year are used for charcuterie. The charcuterie pigs are of the Corsican breed porcu nustrale, while the other half are of the Duroc breed. The latter, being meatier, are used exclusively for the A Casetta catering kitchen, for grilling or stewed dishes.
The pig farming operation is naturally fed with acorns and chestnuts, supplemented with barley flour.
Wedding Planner in Ajaccio and Surrounding Areas - A Casetta Farm
Founded in 1987 by Jules-Antoine Torre and his wife in the plains of Cuttoli Corticchiato at the outskirts of Ajaccio on the Bastia road, the A Casetta restaurant was initially a wooden cabin where people gathered around pizzas and grilled dishes. Toto was in the kitchen before another chef took over for 18 years. This chef, before retiring, trained Yoann in refined cuisine for 10 years, assisted by his brother Michaël, who took over the family business 14 years ago.
Since then, A Casetta farm has become a renowned restaurant in the Ajaccio region before focusing on event planning, offering its catering services throughout Corsica, including wedding planning and reception services. The establishment boasts 3 rooms, a chalet, a reception hall, and a private pool.

The A Casetta restaurant is structured to host weddings and all types of events. Guests are welcomed in a lounge with a bar, all opening onto the main hall with exposed beams. Opposite, a chalet is intended for receptions.
