U Palmentu (du Vieux Moulin) is a restaurant near the port of Centuri in Cap Corse, just below the Hôtel-Restaurant Le Vieux Moulin. Listed in Gault & Millau 2024-2025, this former snack bar has been transformed by Dominique Cavalli into a chic restaurant where you can sample the refined dishes prepared by David Tannevart, chef and pastry chef trainer, while sipping one of his house cocktails.
The restaurant's terrace overlooks the Port of Centuri, where photos of the sunsets are the stuff of memories for those who pass by. You may prefer the family atmosphere of the terrace facing the bar, with continuous service. The restaurant's 70 seats can accommodate events, christenings, birthdays and musical evenings.
A world-inspired chef for seafood dishes
David Tannevart is a well-known chef in the world of cuisine and patisserie. With his partner and pastry chef Veruska Ramirez, he co-founded Davruska Formation, which trains pastry chefs. The couple regularly appear in culinary articles and programs, such as in the Burgundy daily Bien Public, and on this France Bleu Côte d'Or radio program.
His cuisine is above all an ode to the sea, sublimating the products of local fisheries and the coasts of Cap Corse.
But it is also open to influences from elsewhere, gleaned from encounters and experiences. These include Peruvian dishes such as ceviche or Japanese tiradito, with fish cooked in marinades; Gravelax, a salting technique for marinated fish from the Nordic countries, applied here to bluefin tuna or swordfish for a subtly smoky flavor; and Gambero Roll, a nod to American East Coast lobster rolls, revisited Mediterranean-style with gambas and fish rillettes.
U Palmentu in Centuri is open from April to the end of September, lunch and dinner, 7 days a week. Reservations are recommended at the height of the season.

The focus is on the sea, with fish sourced exclusively from local fisheries: Monkfish, Grouper, Liche, Capon, Denti, Saint-Pierre, Bluefin Tuna, Swordfish, Sea Bream, Pagre and the famous Langouste de Centuri, endemic and local products including boutargue from Bastia. Some dishes vary according to availability and seasonality, such as Liche from late May to late June.

U Palmentu uses the very best to serve you, from olive oil from Clos Canarelli to the very best Corsican wine, and also offers La bière du Palmentu 2025, a white beer with Corsican citrus fruits that is an artisanal creation created in collaboration with the Biere Serpa brewery, made especially for the restaurant.

Formerly a fisherman's cellar turned nightclub, U Palmentu has now evolved into a popular Centuri restaurant and cocktail bar. The interior has been completely refurbished, with the creation of a kitchen and a selection of furniture in Corsican chestnut, all under the direction of Dominique Cavalli, who has worked in the events sector in France, Switzerland and Belgium, on exhibitions themed on New York, California and Japan.
Restaurant Radiche in Bastia
In spring 2024, Dumè Cavalli teamed up with a friend to open a restaurant on Bastia's market square - Radiche - which again offers refined cuisine with a philosophy that elaborates dishes aimed at reducing food waste, as they explain in this instagram publication.
The establishment recently made the front pages of Corse-Matin following its inclusion among the 109 restaurants to watch in the famous 2025 edition guide.
